Celebrate National Fish & Chips Day (27 May) by making this quick and easy, yet delicious fish & chips shop style battered fish. As this recipe is so simple, it’s a perfect dish to make if you are cooking for yourself, but it is also a great choice for dinner parties as it can be served individually on a plate or on a big platter for everyone to share.

Ingredients (Serves 4):

4x Fish Fillets of your choice
250g Plain Flour
1tbsp Corn Flour
1tsp Bicarbonate of Soda
300ml Sparkling Water
1 Lemon
Pinch of Salt and Pepper
1 litre Oil

Method

  1. Combine 200g of plain flour, the corn flour, the bicarbonate of soda and a pinch of salt and pepper in a large bowl
  2. Add the zest of one lemon
  3. Gradually pour in the sparkling water and stir the mix until you have a smooth, lump-free batter
  4. Use the remaining plain flour to coat your fish fillets
  5. Dunk the fish fillets in your batter mix
  6. Slowly place the fish fillets into your deep fat fryer and fry for 6-8 minutes (depending on the thickness of the fish) until the batter is golden and crispy. If you do not have a deep fat fryer, fry your fish fillets in a deep saucepan.
  7. Carefully remove the fish fillets from the pan and place on a wire rack for a few minutes to allow the excess oil to drain off.
  8. Serving Suggestion: Serve with chips and salad
