Homemade Triple Cooked Chips Recipe
You can’t beat home cooked chips and they’re not as hard to make as you might think! To level up your cooking and create restaurant quality dishes, use our simple recipe and wave goodbye to oven chips. Our triple cooked chips recipe is also fun for kids if you want to make it a family affair.
Ingredients (Serves 4):
- 4 large potatoes (we used King Edwards), cut into chunky chips
- 2l vegetable oil, for frying
- Maldon sea salt flakes, to serve
Method
- Roughly cut the potatoes into chips (you can leave the skins on).
- Place the cut potatoes in a large pan of salted cold water and boil them for 6-8 minutes or until they are tender.
- Drain them well, place them back in the pan and shake them with the lid on to fluff up the edges. Take care not to break up the chips too much.
- Heat the oil in your largest saucepan to about 150 degrees. Drop a small piece of potato in to check that it sizzles. Fry the chips for 5-8 minutes until they are crisp but not brown. Dry them thoroughly on kitchen paper and leave them to cool.
- When you’re ready to serve your chips, reheat the oil so that it’s really hot (about 180 degrees) and cook the chips for another 5 minutes or so until they are golden. Drain the chips well and sprinkle some sea salt over the top.
