Fish & Chips Recipe
Celebrate National Fish & Chips Day (27 May) by making this quick and easy, yet delicious fish & chips shop style battered fish. As this recipe is so simple, it’s a perfect dish to make if you are cooking for yourself, but it is also a great choice for dinner parties as it can be served individually on a plate or on a big platter for everyone to share.

Ingredients (Serves 4):
4x Fish Fillets of your choice
250g Plain Flour
1tbsp Corn Flour
1tsp Bicarbonate of Soda
300ml Sparkling Water
1 Lemon
Pinch of Salt and Pepper
1 litre Oil
Method
- Combine 200g of plain flour, the corn flour, the bicarbonate of soda and a pinch of salt and pepper in a large bowl
- Add the zest of one lemon
- Gradually pour in the sparkling water and stir the mix until you have a smooth, lump-free batter
- Use the remaining plain flour to coat your fish fillets
- Dunk the fish fillets in your batter mix
- Slowly place the fish fillets into your deep fat fryer and fry for 6-8 minutes (depending on the thickness of the fish) until the batter is golden and crispy. If you do not have a deep fat fryer, fry your fish fillets in a deep saucepan.
- Carefully remove the fish fillets from the pan and place on a wire rack for a few minutes to allow the excess oil to drain off.
- Serving Suggestion: Serve with chips and salad
