Bubble & Squeak Rosti Recipe with Courgette Spaghetti Topping

Celebrate National Vegetarian Week by making this simple and easy, yet delicious vegetarian dish. Our take on Bubble & Squeak is a great dish if you are cooking for yourself and want something quick to make, but it is also a great choice for dinner parties as they can be served individually on a plate or on a big platter for everyone to share.

Ingredients (Serves 4):

100g of Cabbage or Savoy Cabbage
1 Red Onion
2 Potatoes
1 Courgette
5 Cherry Tomatoes
50g Pumpkin Seeds
1/8 tsp Salt
1/8 tsp Pepper
1/8 tsp Paprika


Stage 1 – Make the Bubble & Squeak Rosti

  1. Pre-heat your oven to 180°C
  2. Shred the cabbage
  3. Chop the red onion
  4. Grate the potato
  5. On a medium heat, sauté half of the red onion until it starts to brown
  6. Add the shredded cabbage to the pan and cook until soft
  7. Add the fried onions and cabbage to a mixing bowl, as well as the grated potato
  8. Crush the pumpkin seeds using a rolling pin
  9. Add the crushed pumpkin seeds to the mixing bowl, as well as the salt, pepper and paprika (1/8 tsp or to taste)
  10. Using your hands, mix everything together until the mixture starts to hold together
  11. Add the mix to round biscuit cutter moulds
  12. On a medium heat, fry your Bubble & Squeak Rosti’s
  13. Once brown (after approximately 5 minutes), flip your Bubble & Squeak Rosti’s and cook for a further 5 minutes
  14. Once brown on both sides, place your Bubble & Squeak Rosti’s in the oven for 10 minutes to cook through

Stage 2 – Make the Courgette Spaghetti Topping

  1. Spagettify the courgette (cut to a fine Julienne)
  2. Chop the cherry tomatoes into quarters
  3. On a medium heat, sauté the other half of the red onion with the courgette spaghetti and cherry tomatoes
  4. Take the Bubble & Squeak Rosti’s out of the oven and add the Courgette Spaghetti Topping on top
  5. Serving Suggestion: Serve with vegetables, salad, rice or chips
