Bubble & Squeak Rosti Recipe with Courgette Spaghetti Topping
Celebrate National Vegetarian Week by making this simple and easy, yet delicious vegetarian dish. Our take on Bubble & Squeak is a great dish if you are cooking for yourself and want something quick to make, but it is also a great choice for dinner parties as they can be served individually on a plate or on a big platter for everyone to share.

Ingredients (Serves 4):
100g of Cabbage or Savoy Cabbage
1 Red Onion
2 Potatoes
1 Courgette
5 Cherry Tomatoes
50g Pumpkin Seeds
1/8 tsp Salt
1/8 tsp Pepper
1/8 tsp Paprika
Method:
Stage 1 – Make the Bubble & Squeak Rosti
- Pre-heat your oven to 180°C
- Shred the cabbage
- Chop the red onion
- Grate the potato
- On a medium heat, sauté half of the red onion until it starts to brown
- Add the shredded cabbage to the pan and cook until soft
- Add the fried onions and cabbage to a mixing bowl, as well as the grated potato
- Crush the pumpkin seeds using a rolling pin
- Add the crushed pumpkin seeds to the mixing bowl, as well as the salt, pepper and paprika (1/8 tsp or to taste)
- Using your hands, mix everything together until the mixture starts to hold together
- Add the mix to round biscuit cutter moulds
- On a medium heat, fry your Bubble & Squeak Rosti’s
- Once brown (after approximately 5 minutes), flip your Bubble & Squeak Rosti’s and cook for a further 5 minutes
- Once brown on both sides, place your Bubble & Squeak Rosti’s in the oven for 10 minutes to cook through
Stage 2 – Make the Courgette Spaghetti Topping
- Spagettify the courgette (cut to a fine Julienne)
- Chop the cherry tomatoes into quarters
- On a medium heat, sauté the other half of the red onion with the courgette spaghetti and cherry tomatoes
- Take the Bubble & Squeak Rosti’s out of the oven and add the Courgette Spaghetti Topping on top
- Serving Suggestion: Serve with vegetables, salad, rice or chips
